Because we do not currently have a way to keep chickens and raise our own eggs, we keep dehydrated egg powder on hand in our food storage. Powdered whole eggs in a can last up to 10 years (unopened) and require no refrigeration.
To make, add 2 1/2 Tablespoons dry whole egg powder with 2 1/2 Tablespoons warm water and mix well. This mixture is the equivalent of 1 egg.
You can substitute powder egg for regular eggs in baking and cooking. We have used them when making brownies, and cakes, as well in meat loaf and other main dishes. We have never noticed a change in taste or texture.
